How to Make an Easy Keto Mediterranean Breakfast

What is the Keto Diet?

In a very small nutshell, the keto diet is a low-carb, high-fat, moderate protein diet. It’s similar to the Atkins diet and somewhat involved to describe. But, luckily this article is wonderfully detailed.

Do you ever get bored with your breakfasts?

Lots of people I know can eat bacon & eggs every day and be ok with that. I am not one of these people. I grew up with a mom who cooked amazing meals with a lot of flavor and stretched my taste buds.

I get bored easily with the same meals all the time, especially if they have little taste to pique my interest.

I need variety and flavor.

Lots of flavor.

Mediterranean spices are some of my favorites.

Oregano, basil, garlic, thyme, dill, parsley, cinnamon, salt, and pepper, combined make a wonderful seasoning for almost any dish.

They remind me of my time traveling through Europe during a study abroad, in my senior year of college. I lived wild and free studied with 30 other college students and a few chaperones.

One chaperone, in particular, comes up in every conversation about our time together. An Aussie, named Grant, who shouted “Wakey! Wakey!” every morning way too early after we had a night out exploring local drinking establishments. But, it must have been effective. We’re still talking about it 29 years later.

But, that’s another story.

Add the spices to tomatoes, olive oil, and feta and you’ve got yourself a delicious set up for almost any meal.

Directions

Serving Size: 1

This is what you’ll need:

  • 2 eggs
  • 1 T extra virgin olive oil
  • 2 T water
  • 1 1/2 C Rocket/arugula
  • 1 oz chunk Feta cheese
  • 2 Campari tomatoes
  • Cavenders seasoning (to taste) Salt & MSG free version
  • salt & pepper to taste

Tip: Chunk Feta is sooo much better in this recipe (and most others), rather than the crumbled. The chunk is softer and creamy. Crumbled can be dry. But, if crumbled is all you have – go for it.

Tip: While you could pretty simply make a homemade version of Greek seasonings, I prefer to use Cavender’s in the yellow can for convenience.

How to Make

  1. Heat 1T olive oil in a skillet over medium heat
  2. Crack eggs open and add to skillet. Let cook until whites are cooked to your liking.
  3. Add 2T water to skillet and cover. Let eggs steam for a couple of minutes until yolks are cooked to your liking. (I like a runny yolk)
  4. Slice Campari tomatoes in chunks.
  5. Crumble Feta cheese over tomatoes
  6. Sprinkle Greek seasoning over Feta and tomatoes.
  7. Add rocket/arugula salad to a plate
  8. Enjoy!
